The EASIEST Pumpkin Spice Muffins

Finally, I am posting this recipe. I have been asked for the recipe so many times! And there’s a good reason. They’re delicious, smell so good while they’re baking, and they’re easy (I mentioned that!).

When I bake these muffins, I use all four of the ingredients below. However, you can also bake them using just two.

I use all of these!
If you’re baking for someone with an egg allergy-you can omit the eggs.

The EASIEST Pumpkin Spice Muffins

Ingredients

  • 1 box of SPICE cake mix
  • 1 can of pureed pumpkin
  • OPTIONAL INGREDIENTS:
  • 2 eggs (muffins will be much denser if you do not use eggs)
  • 1/2 cup chocolate chips (I love Ghirardelli Bittersweet)
  • 1/2 cup chopped nuts

Directions

  1. Preheat oven to 350 degrees.
  2. Mix all of the ingredients together in bowl until well-blended. Do not overmix.
  3. Fill lined muffin pan cups 2/3 filled (I used a muffin scoop).
  4. Bake at 350 for 15 minutes.
